Breakfast Foods.

By 8:06 AM

Today was one of those mornings when I woke up feeling like a professional chef. My determination to make one of my fantastic breakfast creations took over and I headed down to the kitchen to put on my pink apron and master chef hat. Just roll with it, ok? Given my passion for breakfast foods and sweet things I decided to attempt a homemade version of pancakes. Or maybe because I forgot about the pre-made aunt jemima pancake mix laying around. Who knows.

Homemade Pancakes
(makes two)

-1 cup all-purpose flour
-2 tablespoons sugar (or 3, or 4, or a million cups. just sayin')
-1 cup milk
-1 egg
-1 tablespoon vegetable oil
-a majestically grand amount of chocolate chips, blueberries, cranberries, strawberries, or any kind of berry to put in your pancake. (Notice the emphasis on the amount of chocolate needed.)
-2 tablespoons unsalted butter, melted
-2 teaspoons baking powder to make those pancakes fluffy-ish.
-1/2 teaspoon salt
-more chocolate chips to put as a final topping and make it look pretty. (Again, and I cannot stress this point enough: CHOCOLATE.)

Directions:
Mix the dry ingredients apart from the wet ingredients. Add the dry ingredients to the wet ones, making a gooey batter, or something liquid enough to look like actual pancake batter. Spray a pan with non-stick vegetable oil and pour some of the mixture. Add the chocolate chip + berries as desired and gently cover them with a little more batter. Wait for the pancake to start bubbling and then flip. When ready, serve on a colorful plate and top it with more chocolate chips (pancakes will be warm enough to lightly melt the chocolate chips, a.k.a heaven). Decorate plate with pretty fruits and confectioners sugar. Put plate on the table and sprinkle the pancakes with a touch of cinnamon and fairy dust to make them out of this world (get it? out of this world. hahahaha). Serve with a cup of warm milk and eat. Or take artsy pictures of your creation until you realize the pancakes are all cold and hard. Yay.

Bon appetite!

With Love,
